Whole wheat bread

Ingredients:

  • 1.75 cups hot water (~100 F)
  • 1 tbsp active dry yeast
  • 2 tbsp milk powder
  • 2 tbsp honey
  • 2 tbsp olive (or vegetable) oil
  • 1.5 tsp salt
  • 4-5 cups whole wheat flour
Instructions:
  1. Warm the water then place in a mixing bowl with the dough hook attachment.  Sprinkle in the yeast.  Allow to proof for 5-10 minutes until frothy.  Add milk powder, honey, oil and salt.  Stir to combine.  Add whole wheat flour about a cup at a time, mixing after each addition, until the dough pulls away from the sides of the bowl.  Knead for 5-7 minutes.
  2. Form into a ball and allow to rise for 30 minutes until doubled.  Optionally punch down and allow to rise for another 30 minutes.  Oil a bread pan and shape the dough into it.  Allow to rise in the pan for 30 minutes.  Bake at 350 F for 35 minutes.  (Optionally replace some or all of the milk powder with 2-4 tbsp of wheat gluten.)
