The other day, I tried slicing up a few veggies paper thin and baking them with a touch of olive oil and salt at 400 degrees until crispy. The “chips” turned out great. The carrot ones were especially good, as they were slightly sweet. I think this could work well with yams or sweet potatoes too. They were a big hit with my kids!

I’ve done this with sweet potatoes and they ARE good! Thanks for the reminder, I’ll have to make some this week.
