That’s a lot of meat!

Americans are eating more meat than ever before, according to a local newspaper (whose source was The Humane Society of the United States).  Check out these stats comparing our meat consumption from 1950 to 2007:

Amount of chicken consumed per person in 1950: 21 lbs.   In 2007: 87 lbs.

Pumpkin apple cranberry muffins

This recipe is so delicious.  I modified a version I found on allrecipes.com years ago and was able to cut the sugar in half and use whole wheat flour without compromising taste or texture.  I think the fresh roasted pumpkin improves the flavor greatly and reduces your exposure to the BPA found in canned pumpkin.

Pumpkin pie with fresh roasted pumpkin

This year for Thanksgiving, we made pumpkin pie with sugar pumpkins that we had roasted ourselves.  It was super easy.  We cut a medium sugar pumpkin in half, scooped out the seeds, and placed cut side down on a baking sheet lined with foil.  We baked it at 400 degrees until soft (about 30 min).   [...]

More info about the dangers of cell phones

In light of reading a report about the dangers of cell phone radiation, I have started using my cell phone much less.  And when I do use it, I put it on speaker phone and hold it at least several inches from my head.  Recently, Dr. Oz talked about cell phones and their risks on [...]

Toy shopping!

I think it’s great fun to have all my holiday shopping done before December.  My husband thinks it’s annoying to be in Christmas mode before Thanksgiving.  So if you’re more like my husband than me, don’t keep reading.
I am a sucker for great quality toys for my two boys.  I love buying classic, simple  toys [...]

Fun cranberry fact

According to Cooking Light magazine, the Oxygen Radical Absorbance Capacity (ORAC) score for cranberries is 9,584.  Blueberries average 6,552.  The antioxidants in cranberries are called proanthocyanidins and clearly, cranberries have a lot of them.   So enjoy eating healthy cranberries this holiday season!

Muir Glen tomato cans lined with BPA

A friend of my mother wrote Muir Glen lately asking “why aren’t your tomatoes in jars since cans have BPA, which is detrimental to our health, in the lining?”
This was their response:
Dear Valued Consumer,

Thank you for contacting Muir Glen regarding bisphenol-A in food packaging. Bisphenol-A is a critical component of protective coatings used with [...]

Healthy snacking

The other day, I tried slicing up a few veggies paper thin and baking them with a touch of olive oil and salt at 400 degrees until crispy.  The “chips” turned out great.  The carrot ones were especially good, as they were slightly sweet.  I think this could work well with yams or sweet potatoes [...]

How to avoid the flu

Below are some simple suggestions of safe ways to prevent the flu this season.  This information comes from a nurse in my area:
The main portals of entry are the nostrils and mouth/throat. In a global
epidemic of this nature, it’s almost impossible to avoid coming into contact
with H1N1, in spite of all precautions. Contact with H1N1 [...]

Al Gore on Letterman

Al Gore was the guest on Letterman on November 3.  The eight minute segment is fantastic.  Very concise, good information about the climate and the effect humans are having on the earth.  I’m really impressed with the depth of Al Gore’s knowledge and his ability to explain things so simply.  Despite the seriousness of the [...]
