Eating vegan

This summer, my husband and I have been trying to eat more vegan.   It turns out that we have been unable to give up eggs, although we’ve limited ourself to one dozen per week for a family of four.  We also haven’t been able to cut out all dairy, although we use soy milk in everything calling for milk and are using much less cheese and yogurt than we were previously.  This entire summer, we’ve eaten meat 5 times–two organic, pastured, local chickens, bison twice, and chicken sausage once (where we used one sausage for a soup that served our family 12 meals).  It actually hasn’t been that hard and I’ve really enjoyed eating uber heatlhy–almost everything we eat is plants.

I’m not sure where we’ll go from here.  With winter coming, I think it will be harder to cook mostly vegan.  But I’m up for the challenge.  My sister gave me a nice vegan cookbook for my birthday and I’m getting good at using 1/3 the cheese called for in recipes like eggplant parmesean.  My husband still wants to eat meat occasionally, but I think we may be doing it only once or twice a month.  I am certainly convinced that much fewer animal products is better for my family’s health and the planet, but I don’t think we’re going to give it all up entirely.  At least not now.
