Fava dip

This is my favorite bean tip.  For some reason, I love it much more than hummus.  The crunchiness of fresh onions on top is delicious.

Ingredients:

  • 9 oz yellow split peas (fava)
  • 2 small onions, 1 chopped coarsely, 1 fine
  • 1 garlic clove, chopped
  • 6 tbsp extra virgin olive oil
  • 1 tbsp fresh oregano
  • salt and pepper
  • pita bread, chips, or veggies to serve with

Instructions:

  1. Rinse the split peas under cold running water.  Put in saucepan with the coarsely chopped onion, garlic, and plenty of cold water.  Boil, then simmer for 45 min, or until very tender.
  2. Drain peas, reserving a little of the cooking liquid.  Put in food processor, add 5 tbsp of olive oil, and blend until smooth.  If the mixture is too dry, add some of the reserve liquid.
  3. Add the oregano and season with salt and pepper.
  4. Pour the mixture into a serving bowl, sprinkle with the finely chopped onion and extra oregano, if desired.  Drizzle remaining olive oil over dip and serve.
