Plants, plants, plants

Those of you following my blog will know that my family has recently re-evaluated our meat eating ways.  We are trying to eat much fewer animal products, including dairy and eggs.  We aren’t completely vegan, but we’re giving it a fairly good try this summer, only eating animal products when they meet the following criteria:

  1. Organic
  2. Pastured
  3. Local

And since these criteria are pretty hard to meet in our area, we’re actually eating very little meat, dairy, and eggs.  Here is a picture of what we had for dinner last night–lima bean bake, sauted cabbage, salad, and sauted spinach with a little bread.  The lettuce and spinach are from the CSA we have joined.  I actually found this meal very satisfying, even without any meat or dairy, and certainly quite healthy.  That must be an entire day’s worth of veggies in one meal.  And for dessert?  We had peaches.
