Peach season

The end of July through early Sept is peach season.  Our farmer’s market is chock-full of them.  We can even buy an eleven pound box of slightly bruised organic peaches for $11.  One of our favorite things to do with them is make them into a cobbler and serve with ice cream.  This recipe is super easy and delicious.

Cobbler Ingredients

2 tbsp melted butter
6-8 ripe peaches, pealed and sliced
1 cup whole wheat pastry flour
3/4 granulated sugar, divided
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup low-fat milk
1/4 cup brandy
2 tablespoons brown sugar
2 teaspoons grated lemon rind

Preparation

Preheat oven to 400°.  Arrange peach slices on the bottom of a 13 x 9-inch baking dish.

Combine flour, 1/2 cup granulated sugar, baking powder, and salt in a small bowl. Add butter, milk, and brandy, and stir until well-blended.

Spoon the batter over the peaches. Combine 1/4 cup granulated sugar, brown sugar, and lemon rind; sprinkle over the top. Bake at 400° for 30 minutes or until bubbly.  Serve with vanilla ice cream.
