This feta and leek “pie” is super delicious. It would be great for brunch or even paired with a salad for a light summer dinner.
Ingredients:
- 1 onion, sliced
- 1/4 cup butter
- 4 tbsp. extra virgin olive oil
- 2 large leeks, chopped (about 1 lb)
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 3 large eggs, lightly beaten
- 7 oz Greek (strained, plain) yogurt
- 11 oz feta cheese
- 1-1 1/3 cup Parmesan or Gruyere cheese
- 3-4 tbsp chopped fresh dill
- salt and pepper
Directions:
- Saute onion in the butter and olive oil until golden. Add leeks and cook over low heat for 10-12 min or until soft. Cool a little.
- Preheat oven to 350 degrees. Lightly grease a 9″ round springform cake pan. Mix flour and baking soda in bowl. Then add eggs, yogurt, feta, and finally the leek/onion mixture. Save 2 tbsp of parmesan cheese, then add the rest to the batter along with the dill. Mix well and season with salt and pepper.
- Spoon mixture into greased pan. Sprinkle with reserved cheese and bake for 40-45 min until golden. Let the pie cool before removing it from the pan.
