Whole wheat banana nut pancakes

Here is one of our favorite breakfasts:

  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour (or use all whole wheat)
  • 2 tsp brown sugar
  • 1 tsp baking powder
  • 1 egg
  • 1 cup buttermilk (we use soymilk)
  • 1 tbsp canola oil
  • 1/2 tsp vanilla
  • 2 bananas, sliced
  • 1/3 cup chopped walnuts

In large bowl, combine dry ingredients. Make well in center. In small bowl, beat the egg and add the other liquid ingredients. Add wet ingredients to dry and stir until smooth (you can cover and refrigerate batter overnight if you want).

Preheat a lightly greased griddle or skillet. Drop batter onto it, top with banana slices and walnuts. When undersides are done, flip pancakes over and cook until golden brown.
